Banana Mandarin Muffins

I’ve had a can of mandarin oranges on the shelf for a few months. I came across this recipe for Banana Mandarin muffins in a cookbook called Mad About Muffins  by Dot Vartan. Thanks Allison G for gifting me this book many moons ago. Sorry, no pic. Jeff is still asleep. The camera is somewhere in the bedroom. He is best left undisturbed.  I subbed half the flour for whole wheat.

Banana Mandarin Muffins

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoons salt
3 tablespoons granulated sugar
1 egg
3 tablespoons oil
1 (11 ounce) can mandarin oranges
1 large very ripe banana, slightly mashed
1 teaspoon orange zest

Heat oven to 375 degrees. In a large bowl, sift together the flour, baking powder, salt and sugar. in a medium bowl, beat together the egg and oil. Drain the oranges while saving the liquid in a  measuring cup. Chop oranges into small pieces. Add the mashed banana and chopped orange to the egg mixtures.

Pour the reserved orange liquid and milk into the egg mixture along with the orange zest and blend well. Pour the egg mixture into the dry ingredients and stir together just until the ingredients are blended. Spoon the batter into greased muffin tins. Bake 20 to 25 minutes until the muffins are golden brown. Makes one dozen muffins.
