Lemon Snowdrops

photoKegan made these cookies for a party a while back. They are so good. The recipe is from page 147 of my mom’s old Betty Crocker cookbook. It makes 24 sandwich cookies.







Lemon Snowdrops

For cookies:
1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon lemon extract
2 cups all-purpose flour
1/4 teaspoon salt

For lemon butter filling:
1/2 cup sugar
2 tablespoons cornstarch
dash salt
1/2 cup water
2 tablespoons butter
2 teaspoons grated lemon peel
3 tablespoons lemon juice

Mix thoroughly butter, powdered sugar and lemon extract. Blend in flour and salt. If dough is soft, cover and chill.

Heat oven to 400F. Shape dough into 48 balls. Place 1-inch apart on a greased baking sheet; flatten slightly. Bake about 8 minutes or until done.

Immediately remove from baking sheet; cool. Put cookies together in pairs with lemon butter filling. Roll in powdered sugar.

For filling – Mix sugar, cornstarch and salt in saucepan. Stir in water gradually. Cook, stirring constantly until the mixture thickens and boils. Boil and stir 1 minutes. Remove from heat. Stir in butter and lemon peel. Stir in lemon juice. Cool thoroughly.

By my calculations – Per cookie – Calories: 150, Total Fat: 8.6g, Sat. Fat: 5.4g, Carbs: 17.2g, Fiber: 0.3g, Protein: 1.1g
