Rich Pumpkin Pie

photoThis recipe is slightly adapted from page 393 of Cotton Country Collection. It is a wonderful pumpkin pie. It makes 8 servings.




Rich Pumpkin Pie

Prepared pie crust
3 eggs, lightly beaten
1 cup evaporated milk
1 cup sugar
1 cup pumpkin puree
1/8 teaspoon salt
1 stick butter, melted
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 pint heavy cream

Cream eggs, milk and sugar. Add remaining ingredients, except heavy cream and mix well. Pour into an unbaked 8 inch pie shell and bake at 400 degrees for 40 minutes or until a knife inserted into the center comes out clean. Cool pie. Whip cream and spread across cooled pie.
