This is from page 313 of Into the Vietnamese Kitchen. It is enough to go with about 4 plates of whatever you are making.
Vegetable Garnish Plate
1 large head of soft leaved lettuce
1 small English cucumber, unpeeled, halved lengthwise, seeded, and thickly sliced
1/2 small bunch cilantro, leafy top part only
1/2 small bunch mint
1/2 bunch fish mint, Vietnamese balm, sorrel or red perilla (optional, but awesome if you can find them)
Arrange ingredients on a plate on the table.
