Red Rice

red riceThis recipe is adapted from page 289 of the Southern Living 2000 Annual Recipes.  It is an easy, quick weeknight meal. It makes 4 servings.







Red Rice

1 (12 ounce) package smoked turkey sausage, sliced
2 (10 ounce) cans diced tomato and green chiles
2 cups low-sodium chicken stock
2 teaspoons Creole seasoning
1 1/2 uncooked long grain white rice

Saute sausage in a lightly greased Dutch oven over medium-high heat for 5 minutes or until browned.

Stir in tomato and green chiles, broth and creole seasoning. Bring mixture to a boil.

Stir in rice. Cover and reduce heat. Simmer for 25 minutes. Uncover; cook until liquid is absorbed.

Per my calculation – Per serving: Calories: 425, Total Fat: 8.3g, Sat. Fat: 3.3g, Carb: 65.4g, Fiber: 1.5g, Protein: 22.5g
