1 (12 ounce) package smoked turkey sausage, sliced
2 (10 ounce) cans diced tomato and green chiles
2 cups low-sodium chicken stock
2 teaspoons Creole seasoning
1 1/2 uncooked long grain white rice
Saute sausage in a lightly greased Dutch oven over medium-high heat for 5 minutes or until browned.
Stir in tomato and green chiles, broth and creole seasoning. Bring mixture to a boil.
Stir in rice. Cover and reduce heat. Simmer for 25 minutes. Uncover; cook until liquid is absorbed.
