Apple-Cranberry Muffins

Apple-Cranberry Muffins

2 cups all-purpose flour
1/2 cup dried cranberries
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup brown sugar
1/2 cup melted butter
1/2 cup applesauce
1/2 cup sour cream
2 eggs

Preheat oven to 350. Line the muffin tin with paper liners.

In a large bowl, mix together the first 5 ingredients. In a smaller bowl, mix together the rest of the ingredients until smooth. Fold wet mixture into the flour mixture. Fill muffin tins about 3/4 full with batter. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

By my calculation: Per muffin – Calories: 249, Total Fat: 10.4g, Sat. Fat: 6.3g, Carb: 35.8g, Fiber: 1.1g, Protein: 3.7g
