Butterscotch Bars

butterscotch barThis recipe is divine. It is high calories, but great as an every now and then treat. The recipe is from page 68 of Christmas at Home: Delightful Desserts. It makes 16 servings.




Butterscotch Bars

1 (12 ounce) package butterscotch morsels
1/2 cup butter
2 cups graham cracker crumbs
1 cup walnuts, finely chopped
1 (8 ounce) package cream cheese
1 (12 ounce) can sweetened condensed milk
1 egg
1 teaspoon vanilla

Preheat oven to 350 degrees. Grease a 9×13 inch baking dish; set aside. In a medium saucepan, melt morsels and butter over low heat, stirring often. Stir in graham cracker crumbs and nuts. Press half the mixture in to the bottom of the pan. In a large mixing bowl, with an electric mixer on medium, beat cream cheese until fluffy. Beat in condensed milk, egg, and vanilla until smooth. Pour over crumb mixture in pan. Sprinkle remaining crumb mixture on top. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. Refrigerate.
