12 ounce can frozen pineapple-orange juice, thawed
1 cup coconut water
3 thin slices ginger
1/2 teaspoon coconut extract
1 liter seltzer
Combine thawed juice, coconut water and sliced ginger in a medium skillet. Cook over medium-high heat until syrupy, about 20 minutes. Stir in coconut extract. Let cool. Add selzter to cooled mixture.
