Citrus-Coconut Soda

photoThis recipe is from the September 2013 issue of Food Network magazine. It is good, not overly sweet drink. (Yes, that is a Halloween cup). The recipe makes 8 servings.








Citrus-Coconut Soda

12 ounce can frozen pineapple-orange juice, thawed
1 cup coconut water
3 thin slices ginger
1/2 teaspoon coconut extract
1 liter seltzer

Combine thawed juice, coconut water and sliced ginger in a medium skillet. Cook over medium-high heat until syrupy, about 20 minutes. Stir in coconut extract. Let cool. Add selzter to cooled mixture.

Per serving – Calories: 95, Total Fat: 0.2g, Sat. Fat: 0g, Carbs: 18.5g, Fiber: 0.2g, Protein: 0.7g
