Sesame Steak Salad

seared-steak-salad-with-edamame-cilantro-5588-ssThis is a super easy salad to put together. The recipe is adapted from page 128 of the July 2013 issue of Family Circle magazine.  It makes 4 servings.





Sesame Steak Salad

3 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
2 tablespoons honey
1 tablespoon fresh minced ginger
1 teaspoon yellow mustard
1 tablespoon toasted sesame oil
1 1/4 pounds flank steak
8 cups mixed greens
3 scallions, trimmed and sliced
1 cup shredded carrots
1 red bell pepper, cored, seeded and cut into strips
1 tablespoon toasted sesame seeds


In a small bowl, combine vinegar, soy sauce, honey, ginger and mustard. While whisking, add oil.

Place steak in a resealable plastic bag and add 3 tablespoons of the dressing. Marinate at room temperature for 15 minutes. Broil or grill steak for 2 to 3 minutes per side, or until desired doneness. Let rest 5 minutes.

Combine mixed greens, peppers, carrots, and scallions in a large bowl. Thinly slice steak; add to salad. Toss with remaining dressing. Sprinkle with sesame seeds, salt and pepper.

By my calculations: Per serving – Calories: 350, Total Fat: 18g, Sat. Fat: 11g, Carb: 16g, Fiber: 3g, Protein: 32g
