Turkey Sausage and Tomato Sauce on Polenta

photoThis is a quick and easy weeknight meal. This recipe was adapted from the March 2013 issue of Clean Eating magazine. it makes 4 servings.

 

 

 

 

 

 

 

Turkey Sausage and Tomato Sauce on Polenta

12 ounces sweet Italian turkey sausage, casings removed
1 yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
3 cups homemade marinara (or a low-sodium, all-natural jarred sauce)
Pinch of red pepper flakes
1 tube premade polenta
12 fresh basil leaves, chopped

In a large nonstick skillet on medium-high, add sausage. Cook. breaking up with a spoon, until browned and cooked through, about 5 minutes. Transfer to a paper towel lined bowl.

Return pan to medium-high heat. Add onions and peppers and cook, stirring frequently, until softened, about 5 minutes. Return sausage to pan. Stir in marinara sauce. Bring to a boil. Reduce heat to medium and simmer for 6 minutes or until thickened. Add pepper flakes and salt and pepper to taste.

Cut polenta into 12 even slices. Arrange slices on plates. Spoon sauce over polenta. Top with chopped fresh basil.
