Tomatillo Salsa Verde

photoI got a  bunch of tomatillos in our CSA box. This salsa is a good way to use them up. It is from page 944 of the Passionate Vegetarian. It makes 48 1 tablespoon servings.




Tomatillo Salsa Verde

1 1/2 pounds fresh tomatillos, husks removed
1/2 large onion, quartered
1/2 cup cilantro leaves and stems, coarsely chopped
2 cloves garlic
1 to 2 fresh Serrano chiles
1 teaspoon salt

Combine all the ingredients in a food processor. Buzz until smooth. That is all.

By my calculations: Per 1 tablespoon – Calories: 7, Total Fat: 0.3g, Sat. Fat: 0g, Carbs: 1g, Fiber: 0.6g, Protein: 0.2g
