Angel Hair Pasta, Chicken and Rocket

Angel Hair Pasta, Chicken and Rocket

9 ounces whole wheat angel hair pasta
1 tablespoon olive oil
1 medium onion, finely chopped
2 pounds ground chicken breast
1 tablespoon tomato paste
25 ounces bottled low-sodium tomato sauce
2 teaspoons dried basil
3 ounces rocket (arugula)
2 tablespoons finely grated parmesan cheese
8 ounces coarsely grated low-fat mozzarella cheese

Cook pasta in large saucepan of boiling water until tender, drain.

Meanwhile, heat oil in a large saucepan; cook onion, stirring until just softened. Add chicken, cook, stirring, 4 minutes. Add tomato paste; cook; stirring until chicken is cooked through. Add sauce; cook; stirring, 5 minutes. Remove from heat, stir in basil.

Preheat broiler. Place half of the pasta in an oiled 8-cup ovenproof dish. Top with half the chicken mixture, rocket and Parmesan; repeat with remaining pasta and chicken mixture. Top with mozzarella. Place under broiler until mozzarella melts, about 2 minutes.
