This recipe is one of the only ways I enjoy flaky white fish. It is really tasty. The recipe makes 4 servings.
Thai Fish Cakes
1 pounds skinless white fish
6 tablespoons minced onion
2 egg whites
2 tablespoons green curry paste
1/2 teaspoon salt
4 teaspoons cornstarch
4 tablespoons minced fresh green beans
4 tablespoons minced red bell pepper
Combine the raw fish, onions, egg white, curry paste, salt and cornstarch in the bowl of a food processor and blend until well mixed but not totally smooth. Stir in green beans and red bell peppers.
Dust your hands with cornstarch to prevent sticking and form the mixture into patties. Lightly spray a nonstick skillet with cooking spray. Saute the cakes in batches over medium her for about 4 minutes on each side, until golden and cooked through.
