Pumpkin Pie Pancakes

Pumpkin Pie Pancakes

1 1/2 cups all-purpose flour
2 tablespoons sugar or honey
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon pumpkin pie spice
1 1/4 cups soy or almond milk
1/3 cup canned pumpkin
1 tablespoon corn oil

In a large bowl, combine the flour, sugar, baking powder, salt and pumpkin pie spice and set aside.

In a food processor or blender, combine the milk, pumpkin puree, and corn oil and process until well blended. Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined.

Preheat the over to 200 degrees F. Heat a lightly oiled griddle or large nonstick skillet over medium heat. Ladle about 3 tablespoons of the batter onto the hot griddle. Cook on one side until small bubbles appear on top, about 2 minutes. Flip the pancake with a metal spatula and cook until the other side is lightly browned, about 1 minutes more. Keep the cooked pancakes warm in the oven while you prepare the remaining pancakes.
