Caribbean Meatloaf

Caribbean Meatloaf

1 1/2 pounds ground round
1/2 cup tomato sauce
1 cup soft breadcrumbs
2 eggs
2 tablespoons minced onion
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
cooking spray
1/2 cup plus 2 tablespoons tomato sauce
1/4 cup canned crushed pineapple in juice, drained
2 tablespoons minced onion
1 1/2 teaspoon brown sugar
1 1/2 teaspoons lime juice
1 teaspoon Worcestershire sauce
1/2 teaspoon allspice
1/4 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon dry mustard

Combine first 8 ingredients. Shape mixture into an 8×4 inch loaf pan coated in cooking spray. Bake at 350F for 1 hour and 5 minutes.

Combine 1/2 cup plus 2 tablespoons tomato sauce and remaining ingredients. Pour over meatloaf. Bake an additional 5 minutes.
