Bombay Burgers with Garlic Curry Sauce

Bombay Burgers with Garlic Curry Sauce

1/2 cup plus 1 tablespoon olive oil mayonnaise, divided
6 1/4 teaspoons curry powder, divided
1/2 cup plain yogurt
1 1/2 tablespoons ketchup
1 garlic clove, minced
2 pounds ground chicken
6 tablespoons chopped fresh cilantro
1/4 cup minced green onions
2 tablespoons minced peeled fresh ginger
2 teaspoons ground cumin
3/4 teaspoon hot chili powder
1 teaspoon sea salt
6 whole grain English muffins

Mix 1/2 cup olive oil mayonnaise, 2 1/4 teaspoons curry powder, and next 3 ingredients in a small bowl for sauce. Set aside.

Place chicken and next 6 ingredients, remaining 1 tablespoon olive oil mayonnaise, and 4 teaspoons curry powder in a large bowl. Mix with fork or hands until blended (do not overmix). Divide mixture into 6 equal portions. Using wet hands, form each portion into a patty.

Cook patties in skillet over medium to medium-high heat from 5 to 6 minutes per side or until no longer pink in the center.

Toast English muffins. Place patties on bottom half of English muffin. Top each patty with sauce. Cover with top of muffin.
