Spicy Chicken Lo Mein

photoThis recipe is a pinterest find. It comes from the blog, Every Craving. It is wonderful. I made a few changes to make a tad healthier. This recipe makes 6 servings.

 

 

 

 

 

 

Spicy Chicken Lo Mein

1 pound chicken breast
garlic salt, coriander, cayenne pepper to taste
12 ounces whole wheat spaghetti
salt
2 tablespoons sesame oil
toasted sesame seeds, optional
For Sauce
1/4 cup reserved pasta water
1/4 cup hoisin sauce
1/4 cup low sodium soy sauce
2 1/2 teaspoons sriracha

Cook pasta according to package directions, salting the water when it comes to a boil. Reserve 1/4 cup of the pasta water before draining. Set aside.

Cut the chicken into nuggets and thrown into a large skillet with the sesame oil. Season with garlic salt, pepper, cayenne, and coriander generously. Saute on medium-high heat until fully cooked.

Meanwhile, in a medium-small bowl, mix together all the components to the sauce. In a large bowl, toss together the pasta, chicken, and sauce until everything is fully coated. Top with toasted sesame seeds if desired.
