Hashbrown Casserole

hash-brown-casserole-kfcThis is one of those southern casseroles that I only make once in a blue moon. It is super rich and so very unhealthy. It is from page 268 of the Vintage Vicksburg Cookbook.

 

 

 

 

Hashbrown Casserole

1 (32 ounce) package frozen shredded potatoes, thawed
1/2 cup butter, melted
1 (10 3/4 ounce) can cream of mushroom or cream chicken soup, undiluted
12 ounces American cheese, shredded
1 (8 ounce) carton sour cream
1 teaspoon salt
1/2 small onion, chopped
2 cups crushed cornflakes
1/2 cup melted butter

Place potatoes in a 9×13 inch casserole dish. Mix together the next 6 ingredients and pour over potatoes. Top with corn flakes and melted butter. Bake, uncovered, at 350F for 45 minutes.
