This recipe is from an old Better Homes and Gardens magazine (December 1980) that I bought at the library for ten cents. I love these old 80s recipes. Reminds me of being a kid.
Easy Chicken-Rice Divan
2 – 10 ounce packages frozen broccoli spears
1/2 cup grated Parmesan cheese
2 cups cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons olive oil buttery spread
2 tablespoons whole wheat pastry flour
1 cup lowfat milk
1 tablespoon lemon juice
1 cup lowfat sour cream
Cook broccoli according to package directions; drain. Arrange broccoli in 13×9 baking dish. Sprinkle half of the Parmesan: top with chicken. Season meat with salt and pepper. Spoon rice over. Melt the buttery spread, blend in flour. Add milk all at once; cook and stir till bubbly. Cook 2 minutes more. Remove from heat. Stir in lemon juice. Fold in sour cream. Pour sauce evenly over chicken Sprinkle with remaining cheese. Bake in 400 degree oven for 15 to 18 minutes.
