This recipe is from the Betty Crocker website (original recipe here). I omitted the bacon that it called. I love these one dish quick meals for busy nights. The recipe makes 4 servings.
Greek-Style Beef and Pasta
1 small onion, chopped
1 pound lean (at least 80%) ground beef
1/2 cup pitted kalamata olives
1 can (14.5 ounces) diced tomatoes with basil, garlic and oregano, undrained
1 can (8 ounce) tomato sauce
1 teaspoon dried oregano leaves
3/4 cup crumbled feta cheese (4 ounces)
Cook and drain pasta as directed on package; cover to keep warm.
Meanwhile, in 12-inch skillet, cook onion over medium heat until soft, stirring frequently. Add ground beef. Cook 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
Stir in olives, tomatoes, tomato sauce, oregano and salt. Reduce heat to medium-low. Simmer 10 minutes, stirring occasionally, until thoroughly heated. Serve over cooked pasta; sprinkle cheese over top.
