Double Date Muffins

This is my version of the date muffin recipe from Dot Vartan’s Mad About Muffins cookbook. They are easy and delicious.










Double Date Muffins

8 tablespoons olive oil buttery spread
1/2 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup coarsely chopped dates
1 1/2 cup whole wheat pastry flour
1/2 teaspoon salt
2 teaspoons baking powder

Heat oven to 375. In a large bowl, beat together the olive oil spread and brown sugar until smooth. Add the egg, milk, and vanilla extract. Beat well. Stir in chopped dates. in a medium bowl, sift together the flour, salt and baking powder. Add the date mixture and stir only until no flour streaks show – do not overmix. Spoon the batter into muffin tins, filling them two-thirds full.

Bake about 20 minutes until a tester inserted into the muffins comes out clean. Makes one dozen muffins.
