Oriental Chicken Salad

This recipe is super simple and yummy. It is from the Eating for Life cookbook.

 

 

 

 

 

 

 

 

 

Oriental Chicken Salad

 

1 pound chicken breast, cut into bite-sized pieces
2 cups cole slaw mix
1 large green onion, chopped
1/4 cup light soy sauce
1/3 cup rice vinegar
2 tablespoons sesame oil
1/2 teaspoon ground ginger
1 cup chow mein noodles
 

In a large mixing bowl, combine cooked chicken, coleslaw mix and green onions.In a small mixing bowl, combine oil, vinegar, soy sauce and ginger. Drizzle over chicken mixture and toss to coat.

Divide chicken salad into four portions. Top with chow mein noodles and serve.
