Curried Apricot Chicken Salad

I served this chicken salad in a spinach wrap. It is healthy and delish. This recipe is from The 150 Healthiest 15-Minute Recipes on Earth. I changed the original recipe a little to suit our taste.

 

 

 

 

 

 

Curried Apricot Chicken Salad

1/3 cup plain low-fat yogurt
1/4 cup olive oil mayonnaise
1 to 2 tablespoons raw honey, to taste
1 tablespoon curry powder
3 cups cooked chicken, diced or shredded
1/2 cup dried unsulfured apricots, chopped (by hand or with a few pulses in the food processor)
1/2 cup toasted sliced almonds

In a large bowl, whisk together the yogurt, mayo, honey, and curry powder until smooth and well incorporated. Gently stir in the chicken, apricots and almonds.
