Pathan Beef Stir-Fry

I’m not sure where I got this recipe. You can switch up the veggies in this if you like. I served it over brown rice. The recipe makes 6 servings.

 

 

 

 

 

 

Pathan Beef Stir-Fry

1 pound 10 ounces lean beef sirloin, cut into strips
2 tablespoons olive oil
1 onion
1-inch piece fresh ginger root, cut into strips
1 fresh red seeded chile, seeded and sliced
2 carrots, cut into strips
1 green bell pepper, cut into strips
1 tablespoon toasted sesame seeds

Marinade
1 teaspoon dried fenugreek
1 teaspoon brown mustard seeds, ground
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 garlic clove, crushed
2/3 cup plain low-fat yogurt
1 teaspoon garam masala or curry powder

To make the marinade, mix the ingredients together in a bowl.

Mix the beef with the marinade, then cover and marinate for 1-2 hours or overnight, in the refrigerator.

Heat the oil in a wok, add the onion, stir-fry until softened.

Stir in the ginger, chile and green bell pepper and stir-fry for 1 minutes.

Add the garam masala and beef with its marinade to the vegetables, and stir-fry for 8-10 minutes, until the beef is tender; it is best if it is still pinkish inside.

Stir in the toasted sesame seeds and serve immediately.
