This recipe is from Thai Cooking and More. It is not as good as Thai House’s cucumber salad, but it hits the spot. It makes 4 servings.
Thai Cucumber Salad
1 larger European cucumber
1/4 medium red onion
1/4 cup rice wine vinegar
2 tablespoons lime juice
1 heaping teaspoon sugar (I used honey)
2 tablespoons chopped fresh cilantro
2 tablespoons chopped unsalted peanuts
Wash, but do not peel, cucumber; cut into thin slices. Mix cucumber and onion in medium bowl. Combine vinegar, lime juice and sugar in small bowl; stir into cucumber mixture. Cover and refrigerate salad at least 30 minutes. Stir in cilantro and top with peanuts before serving.
