Sometimes I like to have a tropical drink (without alcohol). Kegan and i made these last week. I liked it. He thought it was just OK. The recipe is from Clean Eating magazine’s July 2011 issue.
Juice of 1 lime
1/2 teaspoon unsweetened shredded coconut, toasted
1 cup coconut water
1/3 cup light coconut milk
1 cup fresh pineapple
1/2 teaspoon pure coconut extract
1 teaspoon pure maple syrup
1 cup crushed ice
Place lime juice and coconut into 2 seperate shallow dishes. Dip rims of 2 8 ounce hurrican glasses in lime juice, then shredded coconut. (Coconut should stick to the rim of the glass.)
In a blender, mix any leftover lime juice from dish with coconut water, coconut milk, pineapple, coconut extract, maple syrup and ice until well combined, about 45 seconds. Pour into prepared glasses, dividing evenly.
