Tropical Chicken Salad

This recipe is from the Vicksburg Retirement Development: Aged to Perfection Cookbook. It is so yummy. It makes 6 servings.





Tropical Chicken Salad

2 cups cubed, cooked chicken
1 cup chopped celery
1 cup mayonnaise
1/2 teaspoon curry powder
1 can (20 ounce) chunk pineapple, drained
1 large firm banana, sliced
1 can (11 ounce) mandarin oranges, drained
1/2 cup flaked coconut
3/4 cup cashew halves

Place celery and chicken in a large bowl. Combine mayonnaise and curry powder. Add to chicken and mix well. Cover and chill for at least 30 minutes. Before serving, add pineapple, bananas, oranges and coconut. Toss gently. Sprinkle with nuts.
