I love, love, love these mushrooms. This recipe is from the Vegan Planet cookbook.
Jerk-Spiced Portobello Steaks
2 teaspoons light brown sugar or other natural sweetener
1 teaspoon ground cumin
1 teaspoons ground allspice
1 teaspoon dried oregano
1 teaspoon sweet paprika
1 teaspoon salt
1/2 teaspoon cayenne
1/4 teaspoon grated nutmeg
4 large Portobello mushrooms, stems removed
1/4 cup extra virgin olive oil
In a shallow bowl, combine the sweetener, cumin, allspice, oregano, paprika, salt, cayenne, and nutmeg. Set aside.
Coat the mushroom caps with 2 tablespoons of the olive oil, then coat them evenly with the spice mixture. Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add mushrooms and cook until tender, about 5 minutes per side. Serve hot.
