Asian Peanut Noodle Salad

I made this for a work party. Everyone that tried it seems to enjoy it. I thought it was wonderful.

 

 

 

 

 

 

 

Asian Peanut Noodle Salad

Dressing:
1/2 cup peanut butter (smooth)
1/4 cup soy sauce (low sodium)
1/3 cup warm water
2 tblp. chopped fresh ginger
1 medium clove garlic
2 tblp. white wine vinegar
1 1/2 tsp. honey
1 tsp. dried hot red pepper flakes

Noodle Salad:
3/4 lb. linguine fini or spaghetti
4 scallions, thinly sliced
1 red & 1 yellow bell peppers cut into 1/8″ thick strips
1 cup of sliced carrots

Cook the pasta until done, rinse in cold water. Add pasta to the noodle salad ingredients and toss.

Puree the dressing ingredients in the blender for 2 minutes, until smooth. Mix well with the noodle salad.
