This recipe is simple and delicious. It is from Food Network magazine’s June 2011 issue.
Warm Pasta-Bean Salad
8 ounce small pasta (I used whole wheat shells)
1 1/2 cups thawed frozen fava beans or lima beans
1 cup chopped parsley
1 bunch sliced scallions
1/4 cup olive oil
3/4 cup grated parmesan cheese
1/2 teaspoon grated lemon zest
salt and pepper
Cook pasta as the label directs, adding beans in the last minute of cooking. Drain and toss with chopped parsley, sliced scallions, olive oil, grated parmesan, grated lemon zest, and salt and pepper.
