Banana Nut Muffins

This recipe is adapted from the Vintage Vicksburg cookbook’s recipe for banana nut bread. It makes 1 dozen muffins.





Banana Nut Muffins

1 cup sugar
1/2 vegetable oil
2 eggs
3 large ripe bananas
2 cups flour (I used whole wheat pastry flour)
1 teaspoon baking soda
1 cup chopped walnuts
1 teaspoon vanilla extract

Combine all ingredients. Pour into greased and floured muffin tins. Bake at 375 degrees for about 20 minutes.

By my calculations – Per serving: Calories: 327, Total Fat: 16.6g, Sat. Fat: 1.6g, Carb: 41.9g, Fiber: 2.1g, Protein: 5.1g
