Jeff made this tonight. It was so good. This recipe is from the Eating for Life cookbook.
Spicy Buffalo Chicken Sandwich
2 teaspoon Hungarian Paprika
2 teaspoon chili powder
4 chicken breasts (about 1 lb)
1 tablespoon olive oil
1/2 cup hot pepper sauce
3/4 cup fat-free sour cream
2 green onions, sliced
1 ounce blue cheese, crumbled
4 whole-grain buns, split
In bowl combine paprika and chili powder. Sprinkle over chicken breasts
Lightly coat a large skillet with cooking spray and place on medium heat. Place chicken breasts in skillet; cook for 6 min. Turn and cook until no longer pink in center.
Place in large saucepan over low heat. Add olive oil and heat for 1 minute stir in hot pepper sauce.
When chicken is done remove from skillet, place in saucepan & coat evenly with hot pepper sauce mixture.
In small mixing bowl combine sour cream, green onion & blue cheese.
Place a bun on each of 4 plates, top with lettuce and chicken breast.
