1 1/4 pounds tomatoes (finely chopped)
1/2 cup sweet onion (finely chopped)
1/2 cup cilantro (finely chopped)
1 small jalapeno (seeded and chopped)
2 tablespoons fresh lime juice
salt and pepper to taste
In a bowl, toss the tomatoes with onion, cilantro, jalapeno, and lime juice. Season with salt and pepper. Store in refrigerator.
