Thin Mint Ice Cream

 I bought myself and ice cream maker for my birthday. This was my first attempt at ice cream making. Perfection.

 

 

 

 

 

Thin Mint Ice Cream
1 cup whole milk, well chilled
3/4 cup granulated sugar
2 cups heavy cream, well chilled
1 teaspoon pure peppermint extract
1 sleeve crushed Thin Mint Girl Scout cookies

In a medium bowl, use a hand mixer or whisk to combine the milk and granulated sugar until sugar is dissolved, about 1-2 minutes on low speed. Stir in heavy cream and peppermint extract. Process according to ice cream maker instructions. I stirred in cookie crumb in the last 5 minutes.
