Apple Cottage Cheese Pancakes

These pancakes are a breakfast staple at our house. The recipe is from a Moosewood Restaurant cookbook. We’ve tried many different apple varieties. I find that Granny Smith is best suited for my taste.




Apple Cottage Cheese Pancakes

4 egg whites
1 cup cottage cheese
2 medium apples, shredded
3/4 cup  flour
1 tablespoon honey
1 teaspoon cinnamon

1. Beat egg whites until stiff.
2. Combine all other ingredients and mix well. Fold in egg whites.
3. Cook in skillet  or griddle like any pancake recipe.

  1. I usually use whole wheat pastry flour or a mix of half whole wheat flour, half white flour. The heavier flours don’t get fluffy in this recipe.

  2. Geez. It would help if I put the apples in there! I usually shred two granny smiths, but have used sweeter apples with good results. Sorry about that!
